Rainy Days and Mondays….

I was about 12 years old when I discovered Karen Carpenter.  I was watching a made for TV movie and it left me obsessed with her gorgeous, pure alto.   And, lucky me, I discovered a Carpenters record in my parents stash of oldies and goodies.   I don’t know what happened to that record, and have now decided that I need to find its replacement.  To this day I find myself humming “Rainy days and Mondays always get me down” on, well, you guessed it—rainy days and Mondays.

Both Stuart and I had typical Mondays (too busy, too rushed, too everything) and the girls seemed exhausted from it all, too.  I was in charge of dinner tonight, so I came up with a quick plan (thinking ahead yesterday helped…the steak was thawed).

We’ve been purchasing our beef, pork, and chicken from Spring Prairie Meats in Hawley, MN.   The meat can be purchased at the Hutterite community itself.  Stuart tells me that it can be had here—a general store he and his cycling buddies frequent on their long weekend rides.  The quality of the meat is excellent, it is remarkably affordable, and you can feel good about it.

Sweet A was my sous chef tonight.  She generously seasoned the steak with salt and pepper, and put it in the pan (quite an accomplishment for those little hands).

The rainy, chilly weather was perfect for—what else, roasting.  I put in some potatoes, seasoned simply with salt, pepper, olive oil, and thyme.

We served it all with a side salad and some green beans.

Not a bad meal for a Monday.  I think my father (who can cook a steak like no one else) would be impressed.
